Well, weeded out some of the garden bed. Replaced weeds with Hollyhock seeds, which apparently represent love and abundance. Hopefully those light and lovely energies will go into the house. You'll be able to see them from the kitchen window.
I am making Chicken Enchiladas, recipe following.
4 chicken breasts roasted and cut up(you can use thighs or whatever is cheaper, I roast rather then boil, because that way the chicken flavor stays in and doesn't become bland)
I can of chopped up jalepeno
2 bags of cheese, I used monteray jack and colby and monteray jack mix
2 onions sauteed
1 cream cheese package
cup of corn(really you can replace with another veggie)
2 pints of cream
1 green bell pepper cut up and sauteed, you can use other colors
teaspoon of cumin, paprika, oregano, thyme
1 bag of tortillas(I used whole wheat)
Ok take the cup up chicken and put in a bowl. Add the sauteed green peppers, jalepeno's onions, and corn. Add the cream cheese, seasonings. Stir till well mixed and creamy.
Take this mixture, fill up the tortillas and roll(1-2 big serving spoonfulls), place in casserole dish. When first layer is done, layer with half the bag of cheese each. Continue to fill up tortillas and place in casserole dish. Add the two pints of cream and add cheese on top. Bake at 350 for about 20 minutes(ish)
